This is the traditional Cayene pepper chilli with excellent flavour both fresh and dried. Chilli plants, similar to capsicums, are best sown in small seed trays and planted out when 10-12cm tall. Seedlings are best housed in a greenhouse or sheltered position and planted out when weather warms. Chilli plants are frost tender and need warmth to produce the rich, ripe, red colour. Too much nitrogen in the soil can produce lush growth but fewer fruits. When harvesting hot chillies, it is best to wear gloves!
